From select ingredients, the lard is obtained from the fatback of the pork, salted and aged. It is used both to flavour a dish and, uncooked, cut into stripes, as an appetizer.
A curiosity: for centuries, lard was the most used seasoning in the kitchen, used, for example, in the mirepoix, and it was considered essential sustenance up to the mid-XIX century.
