Processed in the Beretta plant of Langhirano, where it is aged for at least 14 months. In the “Fiocco” version, the de-boning is followed by the elimination of the “falsa pera”, more appropriate for knife cutting, careful cleaning and the pressing. Vacuum-packed in a bag.
